Taiwan is delicious. And inexpensive. Surprisingly, there are many people who stop at such simple ideas. It is true that eating out is more common in Taiwan than in Japan, and the home delivery and takeaway systems have developed remarkably. Both producers and diners have a low inhibition threshold for the food itself, and the prevalence of street food is overwhelmingly high. It is this freedom that makes Taiwan's food trends dynamic. Recently, however, there seems to be a movement from the core of a new generation that wants to change Taiwan's food scene. They are not simply pandering to the market or going against the flow of the world, but using their new sensibilities to create their own unprecedented trends. These are the key figures in food culture. We asked them to tell us how people will eat in Taiwan in the future.
