When you think of pairing, you may think of a drinks service that accompanies the course meal you order at a fine restaurant. That's not wrong, and it can be a wonderful, eye-opening experience. On the other hand, in more mundane situations, we could say that we are engaging in ‘unconscious pairing’. Tea with lunchboxes, Coke with hamburgers. Milk with bean-jam buns, coffee with chocolate. It could be said to be a semi-customary habit, but these combinations do indeed ‘go together’. Pairing may be an act of searching for happiness, of finding that moment of encounter and being moved by it.
