Despite being a compact city, each area has its own colour and layers. Kyoto is a city that shines like a prism in a different light depending on who you look at it.
Kyoto is also home to many udon noodle restaurants, which are based on dashi (Japanese soup stock) culture, but it is also one of the best ramen kingdoms in the world. The city is so attached to Chinese food that it has given rise to a genre called ‘Chinese in Kyoto’, but it also loves Western food to the core. It is home to the head temple of tea ceremony and kaiseki cuisine, but also has the most bread and coffee in Japan. It is also a great place to join the tourists for lunchtime drinking! There is also a side of the town that is a drunkard. We dove as deeply as possible into Kyoto, a city full of foodies who love such delicious food, and produced this report while listening to the voices of various local residents and asking the opinions of key people in a variety of fields. This is a different ‘inside view of Kyoto’ from the ‘front face’ of Kyoto, so to speak, that tourists have become accustomed to seeing in the media.
