At that time of post-war recovery, many people were poor, and affordable horse meat was in high demand. But today the production and consumption of horse meat is disappearing. This volume broadly documents the culture and traditions of horse meat in many places around the world, including Belgium, Poland, Kyrgyzstan, Argentina, and the United States.
